Happy release day to Cynthia! I’m so excited about her release of Angel in Chains! Since she’s invited me here for her release day party I’m going to share some holiday awesomeness with you guys. Every year my mom bakes a bunch of to-die-for pies and cakes, but my favorite is her bourbon chocolate pecan pie. Pecan pie by itself is amazing and practically a must for the holidays if you live in the South, but add in chocolate and bourbon…omg, my mouth is watering right now. So how do you make this goodness, you ask?

What you’ll need:

1 pie shell

1 cup white sugar

1 cup light corn syrup

1/2 cup butter (one stick)

1/4 cup bourbon

1 teaspoon vanilla extract

4 large eggs

1/4 teaspoon salt

1 cup semisweet chocolate chip morsels

1 cup chopped pecans

How to Prepare:

 

1. Preheat oven to 325 degrees F

 

2. In a small saucepan combine sugar, corn syrup, and butter. Cook over medium heat, stirring constantly, until butter or margarine melts and sugar dissolves. Cool slightly.

 

3. In a large bowl combine eggs, bourbon, vanilla, and salt. Mix well. Slowly pour sugar mixture (#2) into egg mixture, whisking constantly. Next, stir in chocolate chips and pecans.

 

4. Pour mixture into pie shell.

 

5. Bake in preheated oven for 50 to 55 minutes, or until set. Serve warm or chill. Optional: add a dollop of whipped cream when serving.

    My step father makes something called “honky rolls”. His name for it not mine. They remind me of the Italian pastry Kolachy (cannot spell it; I had it when my in laws lived in chicago. Hubby’s step father is Italian). In the middle is a nut filling sprinked with powdered sugar. YUM YUM.

    My fav holiday dessert is peach cobbler. I cannot stand peaches, but I love the syrup and the flaky warm crust. Add a scoop of vanilla bean ice cream to the piping hot cobbler and its a dessert to drool over.

    I don’t think that cheesecake is a holiday dessert but I do love sugar cookies that are decorated with Christmas colors. Most definitely!

    OMG this sounds amazing. Alcohol burns off when cooked right? I ask since I don’t typically drink since alcohol doesn’t agree with my medicine but chocolate pecan pie…this I think I could do!

    Anyway my favorite holiday desert is Pumpkin Crumb Cake served warm with freshly whipped whip cream! YUM!

    We usually have a sweet potato pie from my mother-in-law and I make a coconut cake for my husband. Cookies are made and eaten all through the holidays.

    My favorite treat is either cut out cookies or my oreo Cheese cakes its so yummy and so easy to make!
    all you need is
    8oz cream cheese
    8oz cool whip
    1 cup sugar
    1 tea spoon of vanilla extract
    and oreos 🙂
    Mix them all together and its done 🙂

    I love pecan pie. It is my absolute favorite. I wait every year until Thanksgiving to get some as that is the only time we have it. Never tried it with bourbon.

    For dinner/dessert it is a fruit salad. For the holiday itself is the Hungarian cookies my gram made. She passed away almost 9 years ago and I got the recipe. Now I make them every year and it’s like gram is still here.

    Ever since I was a child the Chrissy Tradition in my family has been to make Rum Balls. It is a recipe that Mum has been making since the 70s. My brother, sister, Dad and I love mixing in the condensed milk (and licking the spoon), even though we are adults now.
    Must be made with Australian Bundaberg rum.

    My family seems to love my vanilla pineapple cake, Nope… Not upside down but a pinapple cake w/ vanilla puddin, vanilla cake mix, vanilla pudding, vanilla kool whip icing & let’s not forget the pineapple. single layer is YUM YUM good but if i’m gonna make it, they ❤❤❤ as a double layer!
